- cucumber (lots of fresh, I went with an English cucumber, so that you don’t have to mess with seeding it)
- cherry tomatoes (ripe, or you could use sun-dried tomatoes)
- red onion (thinly- sliced, feel free to soak it in cold water beforehand if you want a less onion-y taste)
- feta cheese (galore, I used reduced-fat)
- pasta (your favorite kind of)
- 12 oz. dry pasta (I used farfalle)
- 1 English cucumber (diced)
- 1 pt. cherry tomatoes (halved)
- 2/3 cup sliced kalamata olives
- 4 oz. crumbled feta cheese
- 1/2 medium red onion (peeled and thinly sliced)
- 1/4 cup extra virgin olive oil
- 3 Tbsp. red wine vinegar
- 1 Tbsp. freshly squeezed lemon juice
- 2 tsp. dried oregano (minced)
- 1 tsp. honey (or your desired sweetener)
- 2 garlic cloves (small, minced)
- 1/4 tsp. freshly cracked black pepper
- 1/4 tsp. salt
- 1 pinch crushed red pepper flakes
