- 4 boneless pork chops (3/4- to 1-inch thick)
- 12 oz. penne pasta (OR ziti pasta, cooked and drained)
- 1 cucumber (small, diced)
- 6 oz. feta cheese (crumbled)
- 1 cup cherry tomatoes (halved)
- 1/2 cup fresh mint (chopped)
- 1/2 cup Greek-style vinaigrette

Directions
- Heat an indoor grill pan or outdoor grill to medium-high heat. Place pork chops on the hot grill for 4 minutes on each side, flipping once, until the internal temperature of the pork measures 145 degrees F. Let rest for 3 minutes and cut into strips.
- In a large bowl, gently toss all ingredients with dressing. Serve on shallow salad bowls or dinner plates.

Yum! Turned out really great! I used fresh chopped tomatoes from my moms garden instead of cherry tomatoes and substituted chicken for pork. I didn’t have any mint, so need to try it with mint next time. I used spaghetti as that’s what I had in the pantry. Great for Summer!
