- 4 bell peppers
- 1 onion (chopped)
- 3 garlic cloves (minced)
- 1 stalk celery (cut into small pieces)
- 1 carrot (small, cut into small pieces)
- 1 zucchini (small, cut into small pieces)
- 2 tomatoes (large, or 1 14 oz can of tomatoes)
- 2 cups spinach (or more, chopped or any other leafy green)
- 2 Tbsp. olive oil
- 1/4 tsp. rosemary
- 1/4 tsp. oregano
- 1 tsp. thyme
- 1/2 cup vegetable broth
- 1/2 lemon

Made these last night for the first time and they turned out delicious! All the ingredients in the recipe came from my garden this year. I will admit that I did add a little parmesan cheese to the stuffing and the topping. Made some rice pilaf to go with these as this recipe, unlike many others, doesn't contain rice.
