- 2 handfuls rocket leaves (approximately 40-50 grams)
- 100 grams green beans
- 150 grams cucumber
- 1 large tomato
- 1 cup cherry tomatoes
- 1/3 cup Kalamata olives (or other variety of choice)
- 1 handful flat leaf parsley (fresh to garnish - optional)
- 25 grams mint (fresh)
- 25 grams flat leaf parsley (fresh)
- 1/4 cup olive oil (extra virgin)
- 1/8 cup apple cider vinegar
- 3 Tbsp. tahini (I prefer hulled in this dressing)
- 1/2 tsp. salt
- 1 tsp. honey (optional)
