- 1/2 cup feta cheese (Vegan Alternative – Extra Firm Tofu soaked overnight in Lemon Juice and Garlic. Or Extra Firm Tofu soaked overnight in saltwater or Miso)

- 1/2 cup pomegranate vinegar
- 2 tsp. honey dijon mustard

this is a staple at my house. I use either pearled to regular couscous. it is very easy to sub out veggies and vinegers.
