- 10 cherry tomatoes (chopped)
- 1/2 cucumber (chopped)
- 1/4 cup fresh parsley (chopped)
- 2 oz. feta cheese (cubed)
- 1 Tbsp. extra virgin olive oil
- 1 1/2 tsp. fresh lemon juice
- 1 tsp. sherry vinegar
- salt

Directions
- Chop tomatoes, cucumbers, parsley, and feta cheese into small bite-sized pieces. Add together into a medium sized bowl.
- Add oil, vinegar, and lemon juice to another small bowl, and whisk to incorporate. Add salt and pepper, to taste.
- Add to the chopped veggies, and stir.
