  • 1/4 cup flour
  • 1 teaspoon basil leaves
  • 1 teaspoon garlic salt
  • 1/2 oregano leaves (dried)
  • 1/2 teaspoon rosemary leaves (fine chopped)
  • 1/4 teaspoon pepper
  • 1 1/2 pounds boneless skinless chicken breast
  • 2 tablespoons olive oil (greek)
  • 1 white onion (large, cut into wedges)
  • 1 green bell pepper (large, cut into strips)
  • 14 1/2 ounces diced tomatoes (undrained)
  • 1/2 cup organic chicken broth

    Directions

    1. Mix the first six ingredients in a shallow bowl and reserve 2 Tbs
    2. Coat the chicken evenly with the spice mixture.
    3. Heat the oil in a skillet and add the chicken.
    4. Cook on 3 minutes per side. Remove the chicken from the skillet and add the onion and pepper.
    5. Cook and stir for 5 minutes. Stir in tomatoes, broth, and 2 Tbs. flour mixture.Bring to a boil while stirring frequently. Return the chicken to skillet and reduce the heat to low.Cover and simmer for 10 minutes, or until chicken is cooked through.
