- 1 cup sliced mushrooms
- 1 clove garlic (minced)
- 12 oz. cauliflower rice (see notes to make your own or if using frozen)
- 1 zucchini (small, halved lengthwise and sliced)
- 3 small tomatoes (or Roma, diced)
- 1/2 cup vegetable broth (can sub whatever broth you like)
- 2 cups spinach (roughly chopped)
- 4 Tbsp. sun dried tomatoes (minced, I like the olive oil packed ones)
