- 1/4 cup extra-virgin olive oil

- 3 bell peppers (small, diced, use what ever colors you like, I used yellow and green)

- 1/2 red onion (chopped)
- 1/3 cup Kalamata olives
- 1/3 cup pinenuts
- 1/3 cup feta cheese
- 1 tsp. fresh mint (chopped)
- 1 tsp. fresh chives (chopped)
