  • 1/3 cup roasted red peppers, drained (chopped)
  • 1/2 red onion (a small, chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 green bell pepper (seeds removed, diced {or color of your choice})
  • 1/2 English cucumber (diced)
  • 1/2 cup crumbled feta cheese ({optional})
  • 1 handful fresh mint (chopped)
  • 1 handful fresh parsley (chopped)
  • 4 green onions (chopped)
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 lemon (juiced)
  • 2 garlic cloves (minced)

    Fantastic! Served with harissa marinated chicken, it helped cool down the spice. I added another small handful of cherry tomatoes and a little extra feta. Only used half the onion called for b/c my mother doesn’t like them raw, she loved it!

    Loved it! Used some Apple Cider vinegar for the dressing to add some tang. Also had some water chestnuts so threw them on for a bit of crunch.

    Delcious, added some green beans and left over zucchini, also increased the garlic in the dressing because I love garlic.
