- 1/4 cup hummus (or tahini)
- 1/2 lemon (~1 Tbsp)
- 1 tsp. dried dill (or sub 2-3 tsp fresh)
- 3 cloves garlic (minced)
- water (or unsweetened almond milk to thin)
- sea salt (Optional:, to taste, I didn’t need any)
- 1/4 cup cherry tomatoes (diced)
- 1/4 cup chopped parsley (minced)
- 2 Tbsp. lemon juice

It was good but not great. The seasoning was great on chickpeas. It was a good weeknight dinner.

This was easy enough for my hubby to
make by himself while I finished up (tele)work tonight. All I had to do was print the recipe and chop the tomatoes when he started an after-work virtual meeting halfway through the bake time.
Both kids (one vegan, one meat-eater) gave it 4 stars! (Meat-eater found it a bit bland and added more coriander.) It smelled amazing while baking!

Easy and flavorful, can do a number of steps ahead of time, good meat-free option.

Delicious, I was concerned with the mix of sweet and savory but it was great and the chickpeas add a nice crunch. Might try with a Greek yoghurt in the sauce instead of the hummus next time to see what that does.

Delicious and very filling! I didn't use hummus. Very filling. I'd make it again. It's really easy and you can modify it however you like it.

So easy and absolutely delicious! Have made this several times for a nice savory change of pace. No dill on hand, so added a splash of pickle juice.
