Description
Tis recipe is amalgamated from several others. It uses TVP for texture, tons of fresh herbs, and a little parmesan for extra flavor. Binders are panko and egg. Delicious!
Ingredients

4 SERVINGS
- 2 1/3 cups texturized vegetable protein
- 1 3/4 cups boiling water
- 1 cup finely chopped onion
- 2 Tbsp. olive oil (or other neutral vegetable oil)
- 1 Tbsp. garlic (minced fresh)
- 2 Tbsp. soy sauce
- 1 1/2 tsp. ground cumin
- 1 1/4 tsp. dried oregano
- 3/4 tsp. salt
- 1/2 cup fresh basil leaves (packed, chopped)
- 3 eggs (lightly beaten)
- 3/4 cup grated Parmesan
- 1 cup panko breadcrumbs

Directions
- In a large bowl, combine the TVP and boiling water. Let stand 10 minutes.
- Meanwhile, heat the olive oil in a large nonstick skillet set over medium-high heat. Add the onion and garlic; cook and stir 5 to 6 minutes until onion is translucent. Add the soy sauce, cumin, oregano, salt, and black pepper and cook and stir 30 seconds longer.
- Place the TVP mixture, onion mixture, basil, panko, cheese and eggs in a large bowl and mix to blend.
