- 1 tsp. fennel seed (about 1/3 palmful)
- 1 tsp. crushed red pepper (about 1/3 palmful)
- 1 tsp. dried oregano leaves (or marjoram leaves, about 1/3 palmful, lightly crushed)
- 1/2 tsp. ground allspice
- 1/2 tsp. ground cumin
- 2 Tbsp. EVOO (– Extra Virgin Olive Oil, plus a fat drizzle)
- 4 cloves garlic (2 grated, 2 sliced)
- 1 onion (small, grated)
- 2 Tbsp. tomato paste
- 1 cup wine (red dry)
- 1/2 cup beef stock (or veal stock)
- 2 cups tomato purée (passata, Italian, or tomato sauce)
