- 1/2 leek (pale part, roughly cut, or 2 spring onions)
- 1/4 bunch fresh parsley (leaves, about 10 g)
- 1/4 bunch fresh mint leaves (optional)
- 5 sprigs fresh thyme (leaves only, 1 tablespoon thyme leaves)
- 1 clove garlic
- 1 lime zest
- 1 tsp. sea salt
- 1/2 tsp. ground black pepper
- 1 tsp. coconut oil (butter or ghee)
- 2 Tbsp. olive oil (extra virgin)
- 1/2 leek (green and pale part)
- 1 lemon (5 peels of the skin)
- 1 large carrot (peeled and diced into halves)
- 1 potato (large, peeled and diced into small cubes)
- 3 cloves garlic (sliced)
- 1 tsp. ground cumin
- 2 star anise
- 3 cups chicken stock (or bone broth, 750 ml)
- 1 1/2 Tbsp. fish sauce
- 12 kale leaves (torn off the stem and into smaller pieces)
- 1/2 lime juice
- 1/2 lemon juice (about 2 tablespoons)
- sea salt (to taste)
- freshly ground black pepper
- 600 grams turkey (mince, chicken or pork mince can be used in this recipe.)
