- 1 1/2 cups baby spinach (frozen chopped)
- 1 egg
- 3/4 lb. extra lean ground beef
- 3/4 cup italian style bread crumbs
- pepper
- 1 Tbsp. oil
- 2 cups pasta sauce (jarred, your choice)
- 4 sub rolls (or 2 cups cooked pasta)
- 4 slices provolone cheese (optional)

Directions
- Microwave spinach in a small bowl for 1-2 minutes. Squeeze out liquid.
- Beat egg lightly in medium-sized bowl with a fork. Add spinach, ground beef, bread crumbs and salt and pepper.
- Heat oil over medium-high heat. Form 1-inch meatballs and brown in skillet, turning with spatula (should take about 5 minutes).
