- 1/4 cup grated Pecorino Romano cheese (finely)
- 2 Tbsp. fresh flat leaf parsley (coarsely chopped)
- 1/2 garlic clove (minced)
- 1 medium egg
- coarse salt
- 2 Tbsp. extra virgin olive oil
- 1 small onion (chopped)
- 2 garlic cloves (thinly sliced)
- 28 oz. tomatoes (1 can ,peeled whole, pureed in a food processor)
- 1/4 tsp. crushed red pepper flakes
- coarse salt
- freshly ground pepper
- 1/8 cup fresh basil (leaves torn)
- 2 tsp. fresh oregano (chopped)
- 12 rolls (split and toasted)
- 1/2 cup grated mozzarella cheese (coarsely)
- 1/4 cup grated Pecorino Romano cheese (finely)
