- 2 lb. Italian pork sausage (fresh)
- 1 yellow onion (large, chopped)
- 4 cloves garlic (minced)
- 1 cup red wine
- 56 oz. crushed tomatoes
- 6 oz. tomato paste
- 1/2 tsp. fennel seeds
- 1/2 tsp. dried rosemary
- 1/2 tsp. dried thyme
- 1/2 tsp. salt (or to taste)
- 1/2 tsp. freshly ground black pepper
- 2 Tbsp. sugar (optional, depending on the variety of crushed tomatoes, you may want to add a touch of sugar to balance out the acidity)

This was a big hit and even better the next day. I made it with ground beef instead and because I had more of it then the recipe called for I had to adjust the ingredients accordingly. The red wine really makes it pop. Will definitely be making this again. Oh and I left out the fennel seeds because of an allergy issue and it still kicked butt. Don’t be afraid to play around with this recipe a bit. We had it with Angel hair pasta, but it would really go well with whatever pasta you have in your pantry. Give it a try.
