  • 1/4 cup seltzer
  • 1 1/2 cups matzo meal
  • 1/4 cup onion (grated, dried well)
  • 1/2 teaspoon baking powder (this gives you light and fluffy balls. Add more up to 1 teaspoon for even lighter balls)
  • 1/4 teaspoon salt (or ½ teaspoon if using oil or unsalted schmaltz)
  • 1/4 teaspoon black pepper
  • 1/2 cup cheddar cheese (shredded)
  • 2 quarts water (or vegetable broth)
  • 4 tablespoons extra-virgin olive oil
  • 1 white onion (large, diced)
  • 1 cup carrots (washed, peeled and diced)
  • 1 cup celery (diced)
  • 1/2 cup dry white wine
  • 2 quarts vegetable stock (homemade or store-bought)
  • 2 pounds russet potatoes (about 2 potatoes, washed, peeled and diced into ½ inch cubes. Set in water until using to keep from turning brown.)
  • 1 1/2 cups half and half
