- 6 eggs
- 1/4 cup olive oil (plus 2 tablespoons ,or schmaltz)
- 1/4 cup seltzer (plus 2 tablespoons)
- 1 1/2 cups matzo meal
- 1/4 cup onion (grated, dried well)
- 1/2 tsp. baking powder (this gives you light and fluffy balls. Add more up to 1 teaspoon for even lighter balls)
- 1/4 tsp. salt (or ½ teaspoon if using oil or unsalted schmaltz)
- 1/4 tsp. black pepper
- 1/2 cup shredded cheddar cheese
- 2 qt. water (or vegetable broth)
- 4 Tbsp. extra-virgin olive oil
- 1 white onion (large, diced)
- 1 cup carrots (washed, peeled and diced)
- 1 cup celery (diced)
- 1/2 cup dry white wine
- 2 qt. vegetable stock (homemade or store-bought)
- 2 lb. russet potatoes (about 2 potatoes, washed, peeled and diced into ½ inch cubes. Set in water until using to keep from turning brown.)
- 1 1/2 cups half and half
- kosher salt
- black pepper (to taste)
- 1 pinch cayenne
- 1/2 cup cheddar cheese (shredded or more to taste)
- 1/4 cup fresh parsley (minced)
