- 1 tsp. sesame oil
- 150 grams shiitake mushrooms
- 6 cms ginger (piece, 30g, finely shredded)
- 4 spring onions (sliced into 3cm pieces)
- 2 Tbsp. soy sauce (each, and rice vinegar)
- 4 bagels (toasted)
- shiso (Purple, from Asian food shops, to serve)
- 325 grams firm silken tofu (drained, we used Bonsoy Organic Nigari Tofu)
- 200 grams sour cream
- 1/2 lemon
- 1 tsp. white soy sauce (from Asian supermarkets – substitute light soy sauce)
