- 1/2 tsp. soy sauce (or tamari)
- freshly ground black pepper
- 1 bunch kale (washed, stems removed and leaves chopped)
- 2 Tbsp. dressing (Pumpkin Seed, recipe below)
- 1 cup pinto beans (cooked or canned, drained and rinsed well)
- hot pepper (optional)
- pumpkin seeds (optional)
- dressing (additional, for drizzling)
- 1/4 cup pumpkin seeds
- 1/3 cup water
- 1 lime
- 2 Tbsp. tofu cashew mayo (silken tofu, or vegan mayo of choice)
- 1 Tbsp. white balsamic vinegar
- 1 clove garlic (peeled)
- 1 jalapeno pepper (small, seeds removed, or to taste)
- shiro miso (1 teaspoon mellow white, or salt to taste)
- 1/4 tsp. cumin
