- 1/4 cup warm water
- 1 can chickpeas (about 1 ½ cups, rinsed and drained)
- 1/4 cup olive oil
- 2 Tbsp. maple syrup
- 1/2 tsp. turmeric
- 1/2 tsp. Hungarian paprika (spicy, or child powder)
- 1/2 tsp. ground cumin
- 1/4 tsp. sea salt
- ¼ tsp fresh ground pepper (fresh)
- 1 butternut squash (This is a great recipe to use leftover roasted butternut squash.)
- 2 kale leaves (packed handfuls of raw, curly or dino is great, but any variety will do)
- 1/4 cup olive oil
- 1/2 lemon (juiced)
- 1 garlic clove (minced)
- 2 Tbsp. apple cider vinegar
- 1 tsp. Dijon mustard
- 2 tsp. maple syrup (optional)
- 1/4 tsp. sea salt
- fresh ground black pepper
