- 1 1/2 cups broccoli florets (cut into small bite sized pieces)
- 9.5 oz. buckwheat soba noodles
- 3 Tbsp. toasted sesame oil (plus 1 Tbsp for drizzling on cooked noodles)
- 1/4 cup neutral oil (peanut, canola or grapeseed)
- 2 limes
- 1 Tbsp. ginger (grated)
- 1 clove garlic (finely minced)
- 1/2 cup soy sauce (or tamari)
- 2 Tbsp. sweetener (choice, such as maple or agave)
- 1 Tbsp. Sriracha chili sauce (optional for an extra kick)
- 2 Tbsp. peanut (natural, almond or cashew butter, optional for a creamier dressing)
- 1 bunch green onions (thinly sliced)
- 1/4 cup sesame seeds (toasted, black sesame seeds add great contrast!)
- 1/3 cup shiitake mushrooms (thinly sliced)
- 1 medium carrot (grated or julienned)
- 1/2 cup red cabbage (shredded)
- 1 cup frozen shelled edamame (thawed)
- 1 yellow bell pepper (or red, thinly sliced)
