- 2 flank steak (½lbs lean, cut into small strips)
- 16 oz. spring greens (or greens of choice)
- 1 red onion (chopped)
- 2 bell peppers (colored)
- 1/2 cilantro (a bunch of, chopped)
- 2 lb. cherry tomatoes
- 1 cucumber (large, quartered and chopped)
- 30 oz. corn (drained and rinsed)
- 30 oz. black beans (low sodium, drained and rinsed)
- 15 oz. red beans (low sodium, drained and rinsed)
- 2 cups shredded mexican cheese blend (or cheese of choice)
- 1 Tbsp. taco seasoning (such as McCormick's)
- 2 tsp. garlic powder
- pepper (to taste)

- Heat grill pan on high, sprayed with cooking spray
- Add steak slices, season with taco seasoning, garlic powder, and pepper, toss to combine
