  • 2 pounds baking potatoes (peeled and cubed)
  • 1 1/2 pounds cauliflower florets (roughly chopped)
  • 1 leek (medium, chopped, white part only)
  • 2 cloves garlic (peeled)
  • 4 tablespoons butter
  • 3/4 cup garlic (and herb flavored cheese spread, such as Boursin)
  • 1/2 cup milk (heated)

    Directions

    1. In a large saucepan, combine potatoes, cauliflower florets, leek and garlic. Cover with water then bring to a boil. Reduce heat and simmer for 10 mins, or until potatoes are just tender. Drain.
    2. Return potato mixture to saucepan and mash with butter and cheese spread, adding milk as necessary. Season.

    This was great! I had leftover mashed potatoes and frozen cauliflower, so super easy! Being able to cut the calories and carbs and still have a tasty starch was a bonus!
