Perfect for a cold overcast day.
Quick & easy, used the ingredients as a base & made a chunky version soup!
Improvised the potato forms, added fresh thyme...
Used up 1 c. mashed potato & mini diced the raw potatoes.
Added to the saute sliced carrots & celery.
At the very end 1 cup + parsley stirred in & served.
