- 1/2 tsp. fennel seeds
- 2 cardamom pods
- 4 peppercorns
- 1 clove
- 2 tsp. coriander powder
- 1/4 tsp. turmeric powder
- 1 tsp. cayenne pepper (red chili powder)
- 1/4 cup tomato paste
- 2 Tbsp. unsalted butter
- 2 Tbsp. white flour
- 3 cups whole milk (start with 2 1/2, add another 1/2 cup if need be)
- 1 cup cheese (Gruyere, grated for sauce)
- 1 cup mild cheddar cheese (grated for sauce)
