- 150 grams marzipan (approx, shop-bought or homemade – See NOTES)
- 70 grams cherries (glacé, cut into small pieces)
- 80 grams dried apricot (chopped into small pieces)
- 30 grams sultana (or substitute and split the weight between more apricots and cherries)
- 70 mL orange juice (for soaking the fruit, soak fruit in the juice and then drain before adding to the mix)
- 1 tsp. ground cinnamon (mixed into the fruit and juice)
- 160 grams tapioca starch
- 145 grams potato starch
- 85 grams oat flour (For no oat version sub with sorghum flour)
- 70 grams sorghum flour (or buckwheat flour For no oat version sub with brown rice flour or buckwheat flour)
- 5 grams fine sea salt (= 1 level teaspoon)
- 3 grams xanthan gum (= 1 level teaspoon)
- 20 grams active dry yeast (The type that needs activating, I use Allinson's)
- 3 tsp. honey (for preference – or golden caster sugar)
- 60 grams warm water (hand)
- 3 tsp. large eggs (UK large, Canadian ‘Extra Large’; Australian ‘Jumbo’; and US ‘Extra or Very Large’)
- 28 grams psyllium husks (ground)
- 100 grams milk (full fat)
- 2 1/2 tsp. almond extract
- 1/2 tsp. vanilla extract
- 60 grams golden caster sugar
- 50 grams unsalted butter
- 200 grams milk (full fat)
- 1 Tbsp. sunflower oil
- 1 egg (+ a dash of milk)
- 30 grams potato starch
- 20 grams sorghum flour (or buckwheat flour)
- 40 grams milk (approx)
- 1 Tbsp. light brown sugar (soft)
- 2 Tbsp. water
