- 2 eggplants (diced into 1 1/2-inch cubes)
- 3 waxy potatoes (large, peeled and cut into 1 1/2-inch chunks)
- 3 bay leaves (small)
- 1 3/4 cups coconut milk
- 1 1/4 cups chicken stock
- 1 Tbsp. tamarind paste (*)
- 1 mango (large ripe, peeled and chopped into 2-inch chunks)
- 1 papaya (large ripe, peeled and sliced)
- 1/2 lime (Juice of 1/2 lime)
- 1 1/2 Tbsp. rum (optional)
- 1 can asian (be found at specialty, markets.)
