- 1 kg beef short rib (boneless Angus, cut into 4cm pieces)
- 500 mL chicken stock (brought to the simmer)
- 300 mL coconut cream (brought to the simmer)
- 50 mL fish sauce (or to taste)
- 1 Tbsp. palm sugar (shaved light, or to taste)
- 1 Tbsp. ginger (wild, see note)
- 3 kaffir lime leaves (torn)
- 1 red chilli (long, seeds removed, thinly sliced)
- 1 stalk green peppercorns (fresh)
- 1/2 cup holy basil (each, firmly packed, and Thai basil leaves)

- 10 red chillies (long dried, seeds removed, soaked in warm water for 15 minutes, drained)
- 1 lemongrass stalk (white part only, thinly sliced)
- 1 tsp. dried shrimp (soaked in warm water for 15 minutes, drained)
- 1 Tbsp. shrimp paste (roasted)
- 1 Tbsp. white peppercorns (coarsely ground)
- 200 mL rice vinegar
- 150 grams caster sugar
- 2 coriander roots (scraped and cleaned)
- 1 pickled garlic (head, see note)
- 1 cucumber (Lebanese, diced)
- 23 grams ginger (piece of, cut into julienne)
- 1 shallot (red, thinly sliced)
- 1/2 red chilli (long, seeds removed, cut into julienne)
- 1/2 cup coriander leaves (loosely packed)
