Description
When recipe developer Ivy Manning wanted to get serious with her pescatarian boyfriend (now her husband), she cooked him this simple but sophisticated broiled salmon with a luxurious butter-citrus sauce. Also known as a citrus beurre blanc, the sauce adds a bright burst of flavor to any sort of seafood from salmon to lobster. Though the sauce is a snap to make, it can start to separate if overheated, so follow the directions to keep the heat just right. You can also keep the sauce warm in a small thermos if you’d like to finish it before cooking the rest of the meal. Ingredients
- cooking oil spray (or a little vegetable oil)
- 4 salmon fillets (with skin, wild king or Atlantic salmon, each about 1 in. thick and 6 oz.)
- 1/4 tsp. salt (plus more for seasoning sauce)
- 2 pinches ground white pepper (or black pepper)
- 1 small shallot
- 2 sprigs parsley
- 1/2 cup fresh orange juice (from about 1 1/2 oranges)
- 1/4 cup fresh lemon juice (from about 1 lemon)
- 2 Tbsp. fresh lime juice (from 1 lime)
- 1/2 cup dry white wine
- 2 sprigs fresh thyme
- 3 whole black peppercorns
- 8 Tbsp. unsalted butter (cold)
Directions
- Arrange an oven rack 6 inches below the broiler element and preheat the broiler. Line a small rimmed baking sheet with aluminum foil and mist with cooking spray.
- Place salmon on the prepared pan with skin side down. Feel the top of the salmon for any pin bones. If present, remove them with fish tweezers or clean pliers and discard. Season salmon with salt and white pepper.
