- 2 Tbsp. virgin olive oil (extra-)
- 1 Tbsp. yellow mustard (French’s, [not Dijon!])
- 1 Tbsp. fresh lemon juice
- salt (to taste)
- freshly ground black pepper
- 4 scallions
- 2 red bell peppers
- 1/4 fresh dill (chopped—optional [See kitchen notes])
