- 4 1/2 zucchini (small, cut into half moon slices about 1/2 inch thick, or bite sized pieces)
- 1 can black olives (large pitted, drained very well)
- 1 jar marinated artichoke hearts (drained very well)
- 1 red pepper (chopped into bite-sized pieces)
- 1 red onion (chopped into bite-sized pieces)
- 1 cup olive oil (newman's own, and vinegar dressing)
- Italian dressing (or your favorite, with no sugar)
- juice (half lemon, 2 T)
- 1/4 cup Parmesan (grated, Asiago, or Romano cheese)
- 1 Tbsp. dried basil (or use 2 T basil pesto or 3 T. chopped fresh basil)
- dried oregano (1 tsp.)
- 1/4 cup Parmesan (grated, to sprinkle over salad just before serving, optional)
