- 2 1/2 lb. russet potatoes (about 3 to 4 large, peeled and quartered)

- 1 cup white cheddar (shredded aged, for the potatoes)
- freshly ground black pepper
- 1/2 cup Boursin cheese (or chive cream cheese to my potatoes but this is optional.)
- 1 small yellow onion (diced small, about 1 1/4 cups)
- 2 medium carrots (peeled and diced small, about 1 1/4 cups)
- 4 cloves garlic (minced)
- 4 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 1 1/2 lb. lean ground beef
- 1/3 cup tomato paste
- 3/4 cup beef stock
- 1 Tbsp. all-purpose flour
- 1 cup fresh parsley, chopped
