- 1 cup bread flour (all-purpose flour may be substituted and used exclusively; bread flour yields chewier cookies and is recommended, see below)

- 1 tsp. baking soda
- 1/4 tsp. salt (optional and to taste)
- 1/3 cup maraschino cherries (diced, packed loosely and patted dry, about 15 cherries)
- 3/4 cup white chocolate chips
