- 1 pinch salt
- 2 extra firm silken tofu (or, 21-to 25-ounce packages firm)
- 2 Tbsp. peppercorns (Sichuan, Szechuan, *, see NOTE above)
- 4 chile peppers (dried red Chinese)
- 1/4 cup vegetable oil (mild)
- 1 thai chile (or bird’s eye, or more, to taste, thinly sliced and, if desired, seeded)
- 2 anchovy fillets (optional)
- 4 garlic cloves (thinly sliced)
- 0.5 oz. ginger root (piece of, peeled and finely grated, juices reserved)
- 10.5 oz. ground pork
- 1 Tbsp. black beans (preserved)
- 3 oz. doubanjiang (or chili bean sauce, about 4 tablespoons)
- 1 1/2 Tbsp. caster (superfine sugar, or just blitz granulated sugar in a blender until finely ground but not powdery)
- 2 cups canned chicken broth (or homemade chicken stock)
- 1 Tbsp. toasted sesame oil
- 1 1/2 Tbsp. cornstarch (mixed to a paste with a little water, Worcestershire sauce, and/or soy sauce, to taste)
- 4 ramen noodles (3-to 6-ounce portions fresh or dried thick)
- 1 handful cilantro leaves (roughly torn)
