Description
Mapo tofu is a classic Sichuan dish that’s very simple to make, whether for a weeknight meal for your family or in bigger portions for a dinner party. The creaminess of the tofu contrasts well with the slightly crisp pork, and the thick, luscious sauce pairs perfectly with steamed rice. Traditional mapo tofu is very spicy and includes citrusy, tongue-tingling Sichuan pepper. If you prefer less heat, you can reduce the amount of chili oil — and if your market doesn’t carry the Sichuan pepper you can leave it out. Just in case you have leftovers, the dish tastes even better the next day, as the tofu absorbs extra flavor from the sauce. The recipe is a Yummly original created by Diana Kuan.
Ingredients
- 2 leeks (medium)
- 1 piece fresh ginger (to make 1 tsp. grated)
- 2 cloves garlic
- 2 scallions
- 14 oz. firm tofu (1 block, or 16 oz.)
- 1 cup water (for sauce)
- 2 1/2 Tbsp. hoisin sauce
- 2 Tbsp. chili oil (or 3 Tbsp. for more heat)
- 1 Tbsp. dry sherry
- 2 tsp. soy sauce
- 1 tsp. sugar
- 1 tsp. ground Sichuan pepper (optional)
- 1 tsp. toasted sesame oil
- 2 Tbsp. vegetable oil
- 1/2 lb. ground pork
- 1 Tbsp. cornstarch
- 2 Tbsp. water (for cornstarch slurry)
Directions
- Split leeks in half lengthwise and rinse well. Discard green sections and dry white portions well with a clean kitchen towel. Cut the white sections on a diagonal into 1/2-inch thick slices. Peel and grate ginger until you have 1 tsp. Mince garlic. Thinly slice scallions. Set ingredients aside.
- Drain tofu and cut into 1-inch cubes. Set aside.
- Prepare sauce: In a small bowl, stir together 1 cup water, the hoisin sauce, chili oil, sherry, soy sauce, sugar, Sichuan pepper (if using), and sesame oil. Set aside.
