  • 1/2 cup maple syrup
  • 1/3 cup olive oil
  • 7 cups rolled oats
  • 1 cup oat bran
  • 1/2 cup walnuts (chopped coarsely)
  • 1/2 cup unsalted pistachios
  • 2 tablespoons sesame seeds
  • 3/4 cup dried cranberries
  • 1/2 cup currants
  • 2/3 cup dried apricots (finely chopped)

    Directions

    1. Preheat oven to 275°F. Combine maple syrup and oil. Combine oats, bran, nuts and seeds then toss with syrup mixture. Spread evenly onto 2 shallow rimmed baking trays and bake for 35 mins, stirring occasionally. Add dried fruits and bake for another 5 mins, or until lightly browned.
    2. Remove from oven and let cool on trays. Pack into airtight jars or containers.
