- 1 Orange (I used a vegetable peeler to remove just the peel, taking care not to get any of the white pith underneath)
- 2 Tbsp. peppercorns
- 2 turkey (fresh split bone-in, breasts, about 7 pounds total)
- 1 cup orange juice (freshly squeezed)
- 1 stick unsalted butter
- 1/2 cup maple syrup
- 2 tsp. fresh thyme leaves
- salt (to taste)
