Love this recipe. Really good flavor. Cut ends off squash and MICROWAVE for 3 1/2 minutes. Squash will be easier to cut once you cut. Use a spoon to scoop out seeds and cut into cubes

Super easy and super tasty! I'm definitely making this again. Ibused sugar free maple syrup and the flavor is just as good.
The only thing that was difficult for me was cutting the butternut squash itself. Or maybe I just need sharper knives

These were amazing!! Even my mom who claims she doesn't like butternut squash liked it and sheepishly asked to take leftovers home with her haha!! Peeling, pitting, and cubing the squash takes some time, but I just used a carrot peeler on the skins, then used a spoon to scoop out the seeds/gooey stuff, then chopped into cubes. To peel the skins, I sat in a chair with the garbage can between my knees, then used paper towels across my lap to protect my pants and to hold onto the slippery squash as I peeled. Worked well and let me sit for a majority of the work, and the peels went right into the trash.

It turned out and tasted great! I love cinnamon and Maple Syrup! So I doubled the amount of cinnamon and used Vermont Real Maple Syrup

Yummy! Roasted it with cinnamon sugar instead of maple syrup and cinnamon, and still delicious.
