- 1 tsp. garlic (fresh, peeled and minced)
- 3 Tbsp. lime juice
- 1 Tbsp. agave syrup
- 3 Tbsp. rice wine vinegar
- 1/2 cup mango (fresh, peeled and diced)
- 1 pinch white pepper
- 2 Tbsp. oil (of your choice)
- 1 qt. mixed salad greens (of your choice)
- 1/4 cup red onion (sliced thinly)
- 3 Tbsp. carrots (sliced thinly)
- 1/2 cup mango (peeled and cut into thin slices)
- 1/3 cup cucumber (sliced thinly)
- 1/3 cup cherry tomatoes
- 1 cup Hodo Soy Spicy Curry Nuggets
- 1/3 tsp. salt
- 1/3 tsp. pepper

Directions
- Cut all veggies and tofu and set aside.
- Puree ginger, garlic and mango in a food processor.
- Add all other dressing ingredients to the puree except the oil.
- Then, add oil slowly to blend. Toss all ingredients together and enjoy!
