- 3 Tbsp. lemon juice (or lime juice)
- 2 Tbsp. extra-virgin olive oil
- 1 mango (ripe, sliced)
- 1/2 cucumber (telegraph, halved lengthways and sliced)
- 1 cherry tomatoes (punnet, cut in half)
- 1/4 red onion (thinly sliced)
- 1 avocado (sliced)
- 1 handful basil leaves
- 4 handfuls mesclun (leaves)
- 400 grams chicken (smoked, or 2 breasts, sliced (see my Hot Smoked Chicken recipe, or use store bought))
- foccacia bread (toasted, garlic bread optional)
