Love this version of ceviche de camarones. The mango gives it an unexpected sweetness to the dish. Love that they added cucumber to it. This ceviche is delicious and perfect on the boat, by the pool, for a BBQ party on a hot Summer day. Fabulous!

I added extra lime and vinegar, we like it a bit sour. Added hot sauce and a bit of Adobo seasoning too.

My wife couldn't stop eating it. I would add some OJ next time for additional acidity.
