- 1/2 cup arugula (clean and dry)
- 9 oz. frozen lima beans (package, thawed., if you an find immature ones, use those since the researchers were very specific about the “immature” part)
- 1 mango (cut into cubes)
- 3 pieces cheese (Baybel, peeled and cut into quarters, if not following a vegan diet. PS you can use any cheese you like. I had a ton of those little red circles in my fridge so used them up!)
- 1 avocado (small, cubed)
- 1 Tbsp. slivered almonds
- 1 lime
- 1 Tbsp. chopped fresh mint
- 3 Tbsp. EVOO
- salt
- pepper
- 1/8 tsp. brown sugar
- 1/4 tsp. dark rum (I added that and it was REALLY good, optional)
