- 3/4 cup whole almonds (toasted, cooled)
- 1/4 cup sugar
- 3/4 tsp. salt (scant)
- 1 large egg yolk
- 4 tsp. water
- 1/2 tsp. unflavored gelatin (plain)
- 3 large egg yolks
- 1/4 cup sugar
- 4 1/2 tsp. cornstarch
- 1 tsp. grated orange peel (finely)
- 1/4 cup mango (puree, i sliced up 1 mango and pureed it in my blender)
- 1 cup whole milk
- 1/2 cup heavy whipping cream (chilled)
- 2 oranges (for topping)
