- 3 medium bananas (ripe)
- 3 large eggs
- 1/2 cup coconut oil
- 1 cup sugar
- 1 cup all-purpose flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1 Tbsp. cold water
- 1 tsp. vanilla extract
- 1 1/2 cups chopped walnuts (optional)
- 1 cup semisweet chocolate chips (optional)

Directions
- Preheat oven to 350°F. Grease and flour a 9x5-inch loaf pan.
- Add bananas and eggs to a KitchenAid Blender. Cover and process until smooth.
- In a KitchenAid Stand Mixer using the Flat Beater Accessory, beat oil and sugar until light and fluffy, 3-5 minutes. Combine flour, salt and baking soda; gradually beat into sugar mixture. Beat in banana mixture. Beat in water and vanilla. If desired, stir in nuts and chips. Pour into prepared pan.
- Bake until a toothpick inserted in center comes out clean, 55-60 minutes. Cool in pan 10 minutes before removing to a wire rack.
