- 1/2 cup shallots (chopped)
- 1 stalk lemongrass (finely chopped)
- 2 inches galangal (chopped)
- 2 inches ginger (chopped)
- 8 cloves
- 5 green cardamom
- 2 tsp. ground cinnamon
- 1 star anise
- 4 candlenuts
- 1 1/2 lb. stew beef (such as chuck or boneless short ribs)
- 2 cups coconut milk
- 2 Tbsp. tamarind concentrate
- 1 tsp. salt
- 1/4 cup shredded coconut (dried, for making kerisik, see note)
- 6 kaffir lime leaves (torn into chunks)
- fish sauce (Optional:, for seasoning adjustment)
