- 12 lb. pork meat (combined, and pork fat, I do a 75% meat and 25% fat blend. You can control your own ratio but, sausage has to be mixed with sufficient amount of fat to cook properly.)
- 4 Tbsp. kosher salt
- 6 tsp. dried sage
- 3 1/2 tsp. ground black pepper (freshly)
- 3 1/2 tsp. brown sugar
- 2 tsp. dried thyme
- 1 tsp. marjoram (dried)
- 3/4 tsp. crushed red pepper
- 1/2 tsp. ground cloves
