- 1/3 cup vegetable oil (plain)
- 4 oz. dried rice noodles (wide, following the instructions on how to prepare dried rice noodles for Pad Thai)
- 2/3 cup sauce (~166mL prepared Pad Thai)
- 1 Tbsp. shrimp paste (in oil, มันกุ้งเสวย, as mentioned in my post on Pad Thai ingredients, optional)
- 8 grams garlic (peeled and finely chopped)
- 1 shallot (medium, 18g, peeled and finely chopped)
- 1/4 cup preserved radishes (finely-chopped)
- 1/4 cup dried shrimp (shell-on small, the kind specified in my post on Pad Thai ingredients)
- 3/4 cup tofu (the firmest, you can find)
- 220 grams shrimp (large, 31-35/lb, peeled and deveined)
- 2 large eggs (cracked into a bowl)
- 7 stalks chinese chives
- 2 cups bean sprouts
- sugar
- red pepper flakes
- fish sauce
- limes
- dry roasted peanuts (Chopped)
- bean sprouts (Extra, soaked in acidulated water, to keep them fresh and crunchy)
- chive (Chinese, stalks)
- banana blossom (trimmed according to the instructions in my post on Pad Thai ingredients)
