HORRIBLE!!! The mix was sandy. It had no liquid. I was thinking maybe when I baked it the coconut oil would melt and bring the sand to a dough texture. You take one bite and the cookie falls completely apart(like sand) and tasted absolutely horrible. Very disappointing

These are good! Mine baked up very flat, but I loved the coconut flavor and nutty texture and that they were very chocolatey! I also liked that they’re not very sweet, but you could easily add or sprinkle some stevia to sweeten them. The amount of coconut oil makes them very greasy, so I might reduce that just a bit. I’d make these again for sure, very easy.
Update: I made these with half of the coconut oil. I rolled the dough into balls and pressed gently onto the pan. They made perfect circles, not flat, and not oily!
