Madras Curry Popcorn is the ultimate snack for movie night (or any night!)
Ingredients

- 1/4 cup popcorn kernels
- 1 Tbsp. coconut oil
- 1 tsp. lime zest
- 2 tsp. brown sugar
- 1/2 tsp. Madras curry powder
- 2 Tbsp. shredded coconut
- 1/8 tsp. salt

Directions
- Add coconut oil and a few kernels to a large stock pot. Cover and heat over moderate heat until kernels begin to pop, then add remaining kernels, cover, and continue to cook, shaking pot occasionally. Continue to cook over medium heat until popping stops.
- Mix together lime zest, brown sugar, curry powder, coconut and salt in a small bowl. Toss with popcorn to combine.
